Varieties Of Chocolates To Be Cherished

Everyone loves to eat chocolates and there are endless varieties and flavours that are available these days.

Chocolates as people commonly know is a product that comes from a very ling refining process which begins with the cacao beans. These beans are fermented, dried and roasted and then finally they are grounded. Then one adds some cocoa butter which is a solid fat, cocoa beans and chocolate liquor to make different varieties of chocolates. The types of chocolate that come from this refining process is determined by the various amounts of cocoa butter and chocolate liquor the chocolate contains, as well the amount of sugar and any other ingredients added to the mixture. Here are some major varieties of chocolates that are available in the market and one can have them depending on their chocolate preferences.

Cocoa powder

It is an unsweetened powder which is partially defatted as chocolate liquor. The cocoa powder can give rise to an intense chocolate taste and the natural cocoa powder is light brown in colour. They have a string flavour and is slightly acidic. The best way to use natural cocoa powder is in the recipe of making baking soda. The alkalised cocoa powder is darker in colour and they are less acidic.

Unsweetened chocolate

They are also termed as the baking or bitter chocolate. It is a pure chocolate liquor which is composed entirely of ground cocoa beans. Though it looks and smells like chocolate the taste is completely bitter and it is not meant for consumption. They are best used in cooking when it can be combined with sugar to make it more palatable. As cocoa beans contain equal amounts of cocoa solids and cocoa butter this unsweetened chocolate lends a deep and a very rich chocolate flavour to baked items.

Dark chocolate

This variation of chocolates mainly contains sugar, chocolate liquor, cocoa butter, vanilla and emulsifier. There is no milk solids added to dark chocolate. The cocoa content of commercial dark chocolate mostly ranges from 30 percent to 70 and 80 percent for extremely dark bars. The bittersweet chocolate and semi sweet chocolate which also falls in the dark chocolate category. The bittersweet bar taste a bit sweeter than the semi sweet bar.

Semi-sweet chocolate

This contains at least 35 percent of cocoa solids and it is assumed to be darker than the sweet dark chocolates. But the sugar content in these bars can vary from one brand to another.

Sweet dark chocolate

They do not contain milk solids but it still has a higher percentage of sugar and they are much sweeter than other types of dark chocolates. They have at least 20 to 40 percent of cocoa solids.

Milk chocolate

They contain cocoa butter, chocolate liquor and condensed milk. They have 12 percent of milk solids and 10 percent of chocolate liquor.
